Mediterranean Breakfast Casserole

INGREDIENTS

  • 1 lb turkey ground breakfast sausage

  • 1 - 16 oz carton egg whites

  • 6 whole eggs

  • 1 package grape tomatoes, sliced in half

  • 1 c spinach or kale, chopped

  • 1 tsp basil, used fresh this time

  • 1 tsp each salt & pepper

  • 1/3 c crumbled feta cheese 

STEPS

  1. In a heated skillet over medium heat brown sausage and crumble. Add veggies and cook 5 minutes to soften.

  2. While cooking add eggs and whites to a bowl. Add seasonings to eggs and whisk. Add meat and veggie mixture to a glass 9x13 dish.

  3. Pour egg mixture over meat and top with cheese.

  4. Bake at 400° for 15 minutes or until set.

  5. Switch the oven to broil on high for 1 minute or so to brown the top if desired. Watch it because it burns quickly. You can also make ahead of time and bake before enjoying. I cut into 6 servings. Macros below and flavor swaps don’t affect much of a change in macros.

FLAVOR SWAPS (still using the same eggs, whites, and sausage as above)

Classic Veggie

  • 1 onion, chopped
  • 1/2 package mushrooms, chopped
  • 1/2 package grape tomatoes, cut in half
  • 1/2 bag broccoli, chopped
  • 1 tsp thyme
  • 1 tsp garlic powder
  • 1 tsp each salt & pepper
  • 1/3 c aged cheddar, shredded

Fall

  • 1 apple, chopped
  • 1 onion, chopped
  • 1 tsp thyme
  • 1 tsp sage
  • 1 tsp garlic powder
  • 1/2 tsp nutmeg
  • 1 tsp each salt & pepper
  • 1/3 c goat cheese

Mexican

  • 1/2 can rotel, drained
  • 1 T taco seasoning
  • 1 tsp each salt & pepper
  • 1/3 c cojita or cheddar cheese
  • Top with salsa

Southern

  • 1 lb country uncured ham, diced (instead of sausage)
  • 1 small can green chilies, chopped
  • 1 onion, chopped
  • 1 T dijon mustard
  • 1 tsp pepper
  • 1/3 c cheddar, shredded
