1 lb turkey ground breakfast sausage

1 - 16 oz carton egg whites

6 whole eggs

1 package grape tomatoes, sliced in half

1 c spinach or kale, chopped

1 tsp basil, used fresh this time

1 tsp each salt & pepper

1/3 c crumbled feta cheese
STEPS

In a heated skillet over medium heat brown sausage and crumble. Add veggies and cook 5 minutes to soften.

While cooking add eggs and whites to a bowl. Add seasonings to eggs and whisk. Add meat and veggie mixture to a glass 9x13 dish.

Pour egg mixture over meat and top with cheese.

Bake at 400° for 15 minutes or until set.

Switch the oven to broil on high for 1 minute or so to brown the top if desired. Watch it because it burns quickly. You can also make ahead of time and bake before enjoying. I cut into 6 servings. Macros below and flavor swaps don’t affect much of a change in macros.
