
Let’s meal prep some breakfast the whole family will actually look forward to. My kids get tired of the same old thing, so this has been such a fun change-up, especially with summer coming and everyone on different schedules. The best part? They can just heat these up themselves and go.
You can easily switch up the veggies and cheeses based on what your crew likes (or what you have on hand), which keeps it from ever feeling repetitive. I love these by themselves for a lower-carb meal or with fruit or toast on the side. My boys like toast, biscuits, or waffles/pancakes on the side if you’ve got hungry teen boys to fuel too.

INGREDIENTS
1 lb turkey ground breakfast sausage
1 - 16 oz carton egg whites (or 2 cups)
6 whole eggs
4 oz mushrooms, chopped
1/3 c sun-dried tomatoes
1 handful fresh or frozen spinach
1 tsp thyme
1 tsp garlic powder
1 tsp each salt & pepper
1/2 c shredded Parmesan
6 - 4 cup meal prep glass containers
STEPS
1)In a heated skillet over medium heat, brown sausage and crumble. Add desired veggies and cook 5 minutes or so to soften.
2)While simmering veg/sausage, add eggs and liquid whites to a large bowl. Add seasonings to the egg mixture and whisk.
3)Place 6 glass meal prep containers on a sheet pan. Mine are 4 cup size. Spray dishes with oil. Add 3/4 cup sausage and veggie mixture to each dish. And pour 3/4 cup of the egg mixture in each dish and top evenly with cheese (about 2 tablespoons each). Bake at 400° for 20-25 minutes or until set. If adding mushrooms, it can take longer bc they omit more liquid while cooking. I like to switch the oven to broil on high at the end for 1 minute or so to brown the top, if desired. Watch it because it burns quickly. Makes 6 servings. Cover and store in the fridge and microwave or air fry to reheat.
