Lemon Tahini Pasta Salad

INGREDIENTS

  • 2 - 12 oz pkgs chicken sausage, mine was fully cooked (used 8 links, it was 1 1/2 pkgs) **vegan swap tofu or skip all together

  • 2 - 8 oz pkgs pasta used @kaizenfoodco (other faves are red lentil or chickpea pasta)

  • 10 oz fresh English peas or frozen, thawed

  • 1 bag chopped broccoli, chopped mine even smaller

  • 1/4 c fresh chives, chopped small

  • 1/4 c fresh cilantro, chopped small

  • 1/4 c fresh parsley, chopped small

  • 1/4 c fresh dill, chopped small

  • 4 oz desired cheese, diced into small cubes (I used goat cheddar from TJs)

  • Lemon Tahini Dressing

    • 1/4 c tahini, I use the squirt bottle from Walmart

    • 2 lemons, juiced

    • 1/2 c water

    • 2 tsp garlic powder or 2 cloves, minced

    • 2 tsp each salt & pepper

    • 2 T apple cider vinegar @bragg

      STEPS

  1. Cook pasta, as package directions say. Cooked mine in the least amount of time for more Al Dente pasta salad.

  2. Place in an XL bowl. Add all other ingredients.

  3. Make the Lemon Tahini Dressing by shaking up the ingredients in a jar with a lid.

  4. Pour over the pasta salad. Stir well. I added up macros, can you believe it?!
