Lemon Mug Cake

Lemon Mug Cake is a zesty delight in a single serving. Combine unsweetened applesauce with an egg or flax egg, a touch of salt, and a hint of lemon extract for tangy flavor. Mix in almond flour or coconut flour, vanilla protein powder, and baking powder for texture and protein boost. Top it off with a refreshing yogurt icing for added creaminess. Enjoy this lemony treat in just minutes for a quick and satisfying snack or dessert.

INGREDIENTS

  • 1/2 c unsweetened apple sauce (I used a kid single serve)

  • 1 egg (or flax egg)

  • dash of salt

  • 1/4 tsp lemon extract

  • 3 T almond flour or 1 T coconut flour

  • 2 T The Peachie Spoon Vanilla Protein Powder

  • 1/4 tsp baking powder

  • YOGURT ICING

    • 1 - 5.3 oz container of low sugar lemon flavored yogurt, used @twogoodyogurt (If you can’t find this flavor yogurt, use vanilla yogurt and add 1-2 tsp of fresh lemon juice and stir)

    • 1/2 tsp grated lemon rind

       

      STEPS

  • In a sprayed large coffee mug or cereal bowl combine ingredients in order as listed. Stir well and microwave for 1 1/2 - 2 minutes. I stopped at min and opened the microwave door to let the batter go back down so it doesn’t overflow. I did a bowl and it took 1 1/2 minutes. Just watch it. I like mine a little gooey and not overdone. While it cools, grate the lemon rind with some yogurt and top for an extra added mouth party

  • Make the yogurt icing and top your mug cake!

Tip: Adding a handful of blueberries sounds delish too and goes great still with the balance of nutrients.
