Lemon Cheesecake Smoothie

Indulge in the delightful Lemon Cheesecake Smoothie with this luscious recipe. Begin by combining 1 cup of your preferred milk or water with 1 tablespoon of cashew or almond butter (unsweetened coconut also adds a rich flavor). Introduce a creamy texture with 1/2 cup of low-fat cottage cheese. For an extra fiber boost, add 1 tablespoon of flaxseed (optional).

Elevate the protein content with 1/2 to 1 serving of vanilla protein powder. Enhance the citrusy notes with the juice of one lemon or 1/4 teaspoon of lemon extract, and include 1 teaspoon of lemon rind, washed well. Cool things down by adding 1 cup of ice, and finish with a dash of pink salt for the perfect balance. Enjoy the zesty and velvety goodness of this Lemon Cheesecake Smoothie!

INGREDIENTS

  • 1 c milk of choice or water

  • 1 T cashew or almond butter (unsw coconut works too)

  • 1/2 cup low-fat cottage cheese

  • 1 T flaxseed (optional fiber)

  • 1/2-1 serving Peachie Spoon Vanilla Protein Powder

  • 1 lemon, juiced or 1/4 tsp lemon extract

  • 1 tsp lemon rind (washed well)

  • 1 c ice

  • dash of pink salt

STEPS

  1. Add ingredients in the order listed to the blender and blend well. Topped mine with @altereco_foods low-sugar granola for a “crust”.
