Kickin Kaye Lynne Chicken Salad (Chicken Salad Chick Dupe)

Part 6 of turning every Chicken Salad Chick favorite into a macro-friendly version you can make at home! This one is for my spicy food lovers because WOW. Buffalo sauce, ranch, cheddar, bacon, jalapeños, and all the crunch from celery… every bite is so good.

The best part? It still packs 37g of protein per cup while being blood sugar friendly and perfect for easy summer lunches.Meal prep this once and enjoy wraps, sandwiches, lettuce cups, crackers, or just eat it straight from the bowl like I do. 😅

INGREDIENTS

4 chicken breasts (about 2.5-3 lbs raw), cooked and shredded or chopped

4 oz 1/3 less fat cream cheese, softened (whipped cream cheese works too)

1 1/2 c nonfat Greek yogurt or cottage cheese (blended smooth)

1 tsp garlic powder

1 tsp onion powder 

1/4 tsp pepper

1 tsp salt 

1 - packet ranch seasoning or 3 T ranch seasoning 

1/4 c buffalo hot sauce, used franks 

3 T sriracha hot sauce 

1 c shredded sharp cheddar cheese (tastes better to shred yourself off a block of cheese IMO)

1/4 c pickled jalapeños, chopped small + 1 T juice from jar

3 large ribs celery, finely diced 

4 pieces cooked bacon, chopped small or crumbled 

STEPS

1)If you haven’t cooked your chicken, in a large stock pot place 4 chicken breasts and cover them with water. Just to cover them. Bring to a boil over high heat. Cover and turn down to low heat and cook covered on low for 15 min. Make sure it’s done cooked through. To shred in blender, one breast at a time blend for 5 seconds or until shredded. Too long and you’ll have chicken baby food. It’s quick ha. 

2)To make the chicken salad, add softened cream cheese and Greek yogurt to a bowl with the onion powder, salt, and pepper. Stir or mix until completely smooth with no clumps. Add all the rest of the ingredients to the large bowl and stir well to combine. Makes 7 cups. Store in fridge, good for up to 5 days.
