
This is a lightened-up version of Chicken Salad Chick’s Jalapeño Holly recipe. It’s about half the calories but with more lean protein and less fat. Such a win to hit those feel-good wellness goals for a lunch prep. Love this one all year, but crave it during the warmer months - in a cooler at the beach, lake, or poolside to cool off and still get protein in with it sitting heavy. So good over a bed of romaine or any lettuce with crackers or chips for a crunch or on a sandwich on days I’m craving one.
INGREDIENTS
3 lbs cooked chicken breasts, chopped or shredded (about 4 breasts)
4 oz (1/3 less fat) cream cheese, softened
1/2 - 1 cup blended cottage cheese or nonfat plain Greek yogurt (amount depends on your preference, I like less)
1/3 c pickled jalapeños, sliced
1 T Jalapeno juice (optional)
1/2 red onion, grated or thinly sliced/diced (optional)
3 pieces of bacon, chopped
1 tsp onion powder
1 tsp garlic powder
1/2 tsp pepper
1/2 tsp salt, to taste
STEPS
1)If you haven’t cooked your chicken, in a large stock pot, place 4 chicken breasts and cover them with water. Just to cover them. Bring to a boil over high heat. Cover and turn down to low heat and cook covered on low for 15 min. Make sure it’s done and cooked through. To shred in a blender, one breast at a time, blend for 5 seconds or until shredded. Too long and you’ll have chicken baby food. It’s quick, ha. Can also chop or shred with a fork or mixer.
2)To make the chicken salad, add softened cream cheese and green yogurt to a bowl with the onion powder and garlic powder. Stir or mix until completely smooth with no clumps. Add all the rest of the ingredients to a large bowl and stir well to combine.
3)Store in the fridge. The flavors are even better once it’s been in the fridge a few hours to all soak in. Makes 7 cups

SO GOOD! This recipe is so creamy. I edited the recipe to just make one serving. I used cottage cheese. For the cream cheese I used pepper jack light laughing cow cream cheese. It’s so hard to find chicken salad with decent macros. I will be making this again!
