Indulge in the delightful simplicity of a High-Protein Yellow Mug Cake, a quick and satisfying treat that caters to your sweet cravings. Begin with 1/2 cup of unsweetened applesauce, a naturally sweet base that adds moisture and flavor to the cake. Incorporate an egg (or flax egg) for structure and richness, enhancing the overall texture.
Elevate the taste with a dash of salt and 1/4 teaspoon of vanilla extract, introducing subtle yet essential elements to the cake's flavor profile. Choose between 3 tablespoons of almond flour for a nutty essence or 1 tablespoon of coconut flour for a hint of tropical flair. Boost the protein content with 2 tablespoons of vanilla protein powder, ensuring a wholesome and satiating treat.
Microwave the mug for a few minutes, and voilà – you have a warm, protein-packed mug cake ready to be enjoyed. Top with melted chocolate chips as an icing! This High-Protein Yellow Mug Cake is a perfect balance of convenience and indulgence, making it an ideal treat for any occasion.
INGREDIENTS
-
1/2 c unsweetened apple sauce (I used a kid single serve)
-
1 egg (or flax egg)
-
dash of salt
-
1/4 tsp vanilla extract
-
3 T almond flour or 1 T coconut flour
-
2 T vanilla protein
-
1/4 tsp baking powder
-
Icing: 2 T dark chocolate chips
STEPS
-
In a sprayed large coffee mug or cereal bowl combine ingredients in order as listed.
-
Stir well and microwave for 1 1/2 - 2 minutes. I stopped at 1 min and opened the microwave door to let the batter go back down so it doesn’t over flow. I did a bowl and it took 1 1/2 minutes. Just watch it. I like mine a little gooey and not overdone. While it cools, make a chocolate icing and top for an extra added mouth party!

Icing: Microwave in a glass bowl for 1 min. Remove and stir well. Lily’s sweets and Ghirardelli 65% are my two favorites.
Balance Tip: I love both ways and do coconut flour (lower fat) if it’s a dessert after a higher-fat meal. And almond flour (more fat) is perfect for a more filling snack or meal in itself.

This was terrible! Looked like tan scrambled eggs. I must have done something wrong. 😑
