Green Goddess Salad

This salad is so refreshing and light. It’s yummy as a dip with tortilla chips too. Pair with a protein source, and you’ve got a complete meal. I love to add lemon to spinach when I can because it can double the amount of iron absorbed by the body.  So cool. Maybe throw a handful of spinach into the Lemon Bar Smoothie next time you make it. 

INGREDIENTS

1 - 8 oz bag shredded iceberg 

1 - 10 oz bag angel hair coleslaw

1 cup cucumbers, diced small

1 bundle green onions, chopped small

Dressing

1 cup fresh spinach 

1/2 cup fresh basil

2 garlic cloves, minced

1 small shallot, chopped

2 T chives

Juice of 2 lemons

1/2 cup grated Parmesan

2 T olive oil

2 T rice vinegar

2-3 T water, if needed to thin 

1 tsp salt

STEPS

1)Add lettuce, slaw, cucumbers, and green onions to a large salad bowl. 

2)In a blender or food processor, add all dressing ingredients and blend well. 

3)Pour dressing over salad and toss well. Enjoy! 

Makes 5 - 2 cup servings
