INGREDIENTS
3 - 5 oz cans tuna or salmon, canned and drained
1/3 c avocado oil mayo or Greek yogurt (I almost always use nonfat Greek yogurt)
1 lemon, juiced
1/2 cucumber, chopped small
1/2 red onion, chopped small
2 T jarred capers
1/3 c jarred artichokes, chopped (in water - not oil)
1/3 c jarred roasted red bell peppers, chopped small
1/3 c banana peppers, chopped small
1/4 c feta cheese, crumbled
1/2 tsp pepper
2 T red wine vinegar
STEPS
1)Drain tuna and add to a large bowl. Add all remaining ingredients and stir well. Love this one on a heated wrap or toast as a tuna melt with cheese for a fat source. Makes 6 cups and 4 - 1 1/2 cup servings.
