INGREDIENTS

  • 3-4 tuna or salmon, canned

  • 1/3 c avocado oil mayo or Greek yogurt

  • 1 lemon, juiced

  • 1/2 cucumber, sliced

  • 1/2 red onion, chopped

  • 2 T jarred capers

  • 1/3 c jarred artichokes, chopped (in water not oil)

  • 1/3 c jarred roasted red bell peppers, chopped

  • 1/3 c banana peppers, chopped

  • 1/4 c feta cheese

  • 1/2 tsp pepper

  • 2 T red wine vinegar

    STEPS

  1. Combine all ingredients in a bowl and stir well. Love this one on a heated wrap or toast as a tuna melt with cheese for a fat source.

    Notes: If not a fish fan, chicken works great with this one too. When using tuna, try to not drain the liquid in the tuna can if it doesn’t gross you out. That’s where all the omega-3s are! And if you buy the salmon in smaller cans, it tastes the same as tuna if you want a change-up. Warning, don’t buy canned salmon in a large 16 oz. can unless you’re cool with handling bones and skin. You’re welcome, ha!
