Flourless Protein Brownies

A guilt-free treat that's rich in flavor and packed with protein. To create these delectable brownies, start with the wholesome goodness of sweet potato or canned pumpkin. Add natural almond or peanut butter for a creamy texture and nutty flavor. Crack an egg into the mix for binding and richness, then pour in water or milk to bring the batter together.

For a burst of sweetness, add vanilla extract and granulated monk fruit sweetener. Incorporate cacao or unsweetened cocoa powder, vanilla or chocolate protein powder, baking soda, and a shake of salt for that perfect brownie consistency.

Stir in dark chocolate chips for an extra layer of decadence. Bake until set, and you'll have Flourless Protein Brownies that are not only delicious but also a nutritious treat. Enjoy the guilt-free indulgence in every fudgy and protein-packed bite!

INGREDIENTS

  1. Mash potatoes & add other wet ingredients. Stir well.

  2. Add all dry ingredients except chocolate chips. Stir to combine. Add chips.

  3. Pour batter into an 8x8 pan and bake at 350° for 20-25 minutes. Makes 9 brownies. Store in the fridge. Good for up to a week. If doubling the recipe, bake in a 9 x 13 dish for 35-40 minutes.

What would be a good sub for the peanut butter? More eggs?

For the texture it needs fat so almond butter or sunflower butter is a swap

Thanks for the reply! Can you tell me what peanut butter you use that has less grams of fat? All natural peanut butter looks the same to me so it would be impossible to get those numbers (8gms of fat per 9th of a brownie). Thank you!

Usually Costco but 1/2 c most brands of peanut butter has 64g fat divided by 9 brownies, that’s 7g per brownie from pb. The other gram is from chocolate chips. Hope this helps😊

Love these! I can’t get the calorie total though. Mine comes out with 16g fat and 15.7 carbs per 9th making them 229 calories each. The peanut butter alone adds 14g of fat per serving. What am I missing?

I made these tonight for the first time and they were a hit!! They came out super moist and my most pickiest of picky eaters even ate two! I can’t tell him there’s sweet potato in it or he’ll never eat them again but we all loved them. Will double the recipe next time for sure.

This recipe SO good!! I left out the sweetener and eat it warm with a scoop of ice cream. Feels like dessert from a fancy restaurant. ☺️
