Feta Crack Dip Chicken Salad

INGREDIENTS

  • 1 - 15 oz can organic corn, drained
  • 1 - 15 oz can organic black beans, rinsed and drained 
  • 4 green onions, chopped (white & light green part)
  • 6 oz crumbled feta cheese
  • 1/3 c white vinegar
  • 2 T monk fruit, allulose, or 2 tsp stevia (optional)
  • 3-4 chicken breasts cooked and chopped (about 4 cups)

STEPS

  1. Add all ingredients to a bowl and stir.

PROTEIN chicken, small amount in cheese and beans too

FIBER onions, some in beans and corn 

CARB/STARCH beans, corn
