Egg Nog Smoothie

Egg Nog is a love/hate just like cottage cheese and not everyone’s fave. There’s no in-between, ha! I just had it, the taste is spot on, and loved it. Complete blood sugar balancing meal as always. This is a delightful and nutritious blend that captures the classic flavors of egg nog with a healthy twist.

To create this smoothie, start with a cup of your choice of milk—I used almond milk for a light and nutty flavor. Add half an avocado (fresh or frozen) for creaminess, and a banana (fresh or frozen) for natural sweetness.

For a protein boost, incorporate a serving of vanilla protein and a scoop of collagen, Greek yogurt, or liquid egg whites for an extra protein kick. I used collagen for a smooth texture. To add a touch of holiday warmth, include a dash of nutmeg and rum extract. If you're feeling a bit more indulgent, you can opt for 1 oz of real rum.

For optional fiber, add a tablespoon of flax, chia, or psyllium husk. A dash of pink salt enhances the overall flavor. If you want to sneak in some greens, throw in a handful of spinach.

Blend everything with a cup of ice until smooth, and you'll have a nutritious and festive Egg Nog Smoothie that's perfect for the holiday season. Sip and savor the creamy, spiced goodness in every refreshing gulp!

  • 1 c milk of choice (used almond)

  • 1/2 avocado (fresh or frozen)

  • 1 serving vanilla protein

  • 1 scoop collagen, 1/4 c Greek yogurt, or 1/3 c liquid egg whites (extra protein) I used collagen this time.

  • 1 T flax, chia, or psyllium husk (optional fiber) used husk

  • dash pink salt

  • dash nutmeg

  • 1/2 banana (fresh or frozen)

  • 1/4 tsp rum extract (or 1 oz of real rum if this is dinner and you’re feeling boozy)

  • 1 c ice

  • Handful spinach, if desired

    STEPS

  1. Place ingredients in a blender and blend on low, then switch to high until well blended. Takes a little longer if using frozen avocado and banana. Top with optional whipped cream & cinnamon or more nutmeg.

    Notes: Liquid egg whites are a great complete protein source as an add-on in any smoothie and store-bought in a carton are pasteurized so totally fine raw. Can’t taste it, promise. If you want to embrace the egg part of the nog. Gotta have the protein powder to still taste good, of course.
