Egg Muffins

INGREDIENTS

  • 6 whole eggs

  • 1 16 oz carton egg whites

  • 1 c any veggies you’d like, chopped

  • 1 tsp each salt & pepper

  • 1 tsp thyme

  • 1 tsp garlic powder

  • 1/4 c desired cheese 

    STEPS

  1. In a skillet over medium heat, sauté veggies for a few minutes to soften. While they cook, add eggs and whites to a bowl, add spices, and whisk. Place veggies & cheese in muffin tin. Pour eggs over veggies mixture until 3/4 full. Bake at 375° 15-20 minutes.

    Notes: Great for meal prep. Perfect by themselves or to be satisfied longer, pair with a potato, a side of toast, or a piece of fruit for your starch/carb. Serving size wise I usually eat 3 muffins.
