Easy Sheet Pan Nachos

INGREDIENTS

  • 2 lbs ground beef, turkey, or chicken

  • 1 packet taco seasoning

  • 1 cup desired cheese, queso, &/or feta

  • 3 servings tortilla chips, about 84g

  • 2 bell peppers, chopped (any color)

  • Any toppings ~

    • Fresh cilantro

    • Diced onions

    • Pickled onions

    • Salsa

      STEPS

  1. In a skillet over medium heat brown meat and add seasoning. You can add 1 c frozen riced cauliflower too for a sneaky veggie if you feel like it. When I do add the cauliflower, l add 1 can of tomato sauce to hide the veggie even more. Makes the meat more saucy.

  2. Place chips on one sheet pan and chopped bell peppers on the other. Top with meat and desired cheeses. Bake 400° for 5 min.

  3. Add any toppings and enjoy! I usually do mostly peppers and some chips because just chips would sit heavy because a little fat-heavy and just peppers is sad, ha!

    Notes: You can easily swap the meat out for a rotisserie chicken in a pinch or do 4-6 chicken breasts in a slow cooker with taco seasoning and a jar of salsa. Cook on low for 4-6 hours or high for 3 hours. Ensemble nachos and bake the same
