Easy Meatball Vegetable Soup

A simple and satisfying dish that brings together the goodness of meatballs, hearty vegetables, and flavorful seasonings. Start by adding 2 bags of frozen turkey meatballs to a large pot. These pre-made meatballs provide a convenient and delicious protein base for your soup.

Chop an onion and add it to the pot, creating a savory foundation for the soup. Include a bag of new potatoes, chopped into bite-sized pieces or cut in half if they are smaller in size. These potatoes add a comforting and substantial element to the soup. Incorporate a bag of frozen mixed vegetables, such as corn, green beans, and carrots, providing a colorful and nutritious blend. Add a can of tomato paste and a can of diced tomatoes, enhancing the soup with rich tomato flavor.

Pour in bone broth, choosing either beef or chicken based on your preference. Include 2 cloves of minced garlic or 2 teaspoons of garlic powder, infusing the soup with aromatic goodness.

Season the soup with 1 tablespoon of Italian seasoning, and salt and pepper to taste. Adjust the seasoning as needed, keeping in mind that there's salt in the meat and broth.   • 2 bags frozen turkey meatballs

  • 1 onion, chopped

  • 1 bag new potatoes, chopped or cut in half if smaller-sized potatoes

  • 1 bag frozen veg (corn, green beans, carrot mix)

  • 1 can tomato paste

  • 1 can diced tomatoes

  • 32 oz bone broth (beef or chicken)

  • 2 cloves garlic, minced or 2 tsp powder

  • 1 T Italian seasoning

  • salt & pepper to taste (I did 1/2 tsp maybe) there’s salt in the meat & broth

    STEPS

  1. Slow Cooker: Put all ingredients in a slow cooker - cook low 6-8 or high 3-4 hrs

  2. Instant Pot: Manual high pressure 25 min, natural release 10-15.

  3. If last minute, put all in a Dutch pot - bring to a boil and cover until potatoes are cooked through (about 30 min)
