
Easy Beef Enchiladas 41g protein each!
INGEDIENTS
2 lbs lean or extra lean ground beef or turkey or a combo of each
1 - 1.25 oz packet taco seasoning or about 2 T
1 - 19 oz can of enchilada sauce
6-10 tortillas (used low carb/high fiber but any work)
1/2 c shredded Mexican cheese
STEPS
1)preheat oven to 350°. In a skillet over medium heat, brown and crumble beef until cooked through. Add taco seasoning and half the jar on enchiladas sauce. Stir and turn heat to low.
2)On the countertop or a clean flat surface, add about 3/4 c beef to each tortilla, roll and add to a 9x13 glass dish. Cover with other 1/2 of the sauce and top with cheese.
3)Cover with foil and cook 10 minutes at 350°.
5)Remove foil and cook 10 more minutes. Topped mine with fresh cilantro and light sour cream/nonfat Greek yogurt as a sour cream for extra protein.
