It’s so refreshing and perfect for a quick lunch or dinner bc full of fiber, protein, and healthy fats. You could also skip the chicken and it’s a delish side dish for a BBQ or topper for fish tacos. It can be so many yummy things.
Savor the taste of summer with this Creamy Chicken & Corn Salad. Mix together corn kernels, cooked chicken, diced red onion, chopped cucumber, chopped red bell pepper, and chopped fresh cilantro. Season with salt, pepper, chili powder, and a squeeze of lime juice for a zesty kick. Stir in nonfat Greek yogurt or avocado mayo for creaminess, then sprinkle with crumbled feta cheese for a tangy finish.
INGREDIENTS

4 cups corn or 4-6 fresh husks, kernels removed or 2 - 10 oz bags frozen, thaw in the fridge.

2 c chicken, (I used rotisserie)

1 red onion, diced

1/2 cucumber, chopped

1/2 red bell pepper, chopped

1/3 c fresh cilantro, chopped

1 tsp each salt & pepper

1/2 tsp chili powder

1 lime, juiced

1/2 c nonfat Greek yogurt or avo mayo

4 oz feta, crumbled

Stir all ingredients in a large bowl and enjoy!
Notes: I like this one chilled on a warm day. I don’t cook the corn first usually but you definitely can, if desired. Makes 9 cups. It’s a meal all by itself but you can skip the chicken and make it more of a side or fish taco topper.
