Cranberry Orange Chia Jam

INGREDIENTS

  • 1-12oz bag fresh cranberries

  • 1/2 c orange juice from 2 oranges

  • 2 T orange rind

  • 3 T monk fruit (add more for a sweeter jam. I like it tart) a little maple syrup or honey works too but adds sugar

  • 1/2 c water

  • 1/4 c chia seeds

  • dash sprinkle salt

    STEPS

  1. Add all ingredients to a saucepan and bring to a boil.

  2. Reduce heat and simmer, stirring occasionally uncovered for 20 min. It’s normal for the cranberries to pop some.

  3. While stirring, mash the cranberries with the back of the spoon if you want a smoother jam. Store in a covered jar. This recipe filled 2 small jars. Good for 1 month in the fridge. *If you want more of an intense orange flavor, adding 1/2 tsp of orange extract is a yummy addition.

    Notes: I love to eat seasonally because it’s fresher, saves and gives us the nutrients we need for that season. Cranberries contain potassium, iron, magnesium, calcium, zinc, vit C, A, E, K, B-1, 2, 3, & 6. These help support immune health so it’s no mistake they’re in season during cold and flu season. Not to mention the healthy omega-3s and fiber that’s in the chia seeds and the vitamin C in the oranges too. This also would be a great gift for neighbors, hostesses, and friends too during the holidays. Such a pretty color.
