I am out of coconut flour at the moment. Would any other GF flours work?

thepeachiespoon replied:
It should but it’s not an equal swap. 1 cup other flours = 1/4 cup coconut flour

My tummy doesn’t do well with protein powder. I substituted by using 1 scoop protein powder, 1 scoop PB Fit Powder and a bit more coconut flour. Any suggestions on what could be used instead of protein powder? I realize the protein powder is meant to give it flavor.

So sorry! Have you tried mine? It’s super easy on digestion bc lactose free and no gut disruptors from gums and lechitins. I’d add some natural sweetener too like stevia or monk fruit. If you do well with PB fit, it may work best for a full swap too

I am so excited to make these! I’m baking them now and I’m just curious – mine are taking a while to get a little browned, it’s probably been in the oven for 20 minutes now – eeek!! They’re still squishy as well, but I imagine they’re supposed to be since they’re not your normal cookies. Just wanted to ask to be sure: it’s ok that they’re soft/squishy? Do you simply know they’re done based on them being a little browned, not based on consistency? Thank you so much!

I’d take them out! They’ll harden as they cool. Let them sit and store in the fridge
