INGREDIENTS

  • 16 oz low-fat cottage cheese

  • 2 teaspoons vanilla extract

  • 1/2 c coconut flour

  • 1/2 c protein powder

  • 1 c dark chocolate chips

    STEPS

  1. Add cottage cheese and vanilla to blender and blend. Pour into a bowl and add remaining ingredients. Stir well.

  2. Form into cookie shapes (they don’t spread) and bake at 350° for 12-14 minutes. Mine took 12 and made 12. Store in the fridge. Good for a week.

I am so excited to make these! I’m baking them now and I’m just curious – mine are taking a while to get a little browned, it’s probably been in the oven for 20 minutes now – eeek!! They’re still squishy as well, but I imagine they’re supposed to be since they’re not your normal cookies. Just wanted to ask to be sure: it’s ok that they’re soft/squishy? Do you simply know they’re done based on them being a little browned, not based on consistency? Thank you so much!

I’d take them out! They’ll harden as they cool. Let them sit and store in the fridge

What’s a good flavor of protein powder to use? What’s your favorite ? I have all of Equip’s flavors on hand .
