2 medium ripe bananas

1 c cottage cheese

1/2 c egg whites

2 tsp vanilla extract

DRY
-
1/2 cup coconut flour
-
1/3 cup vanilla protein powder
-
1 tsp baking soda
-
1 tsp cinnamon
-
dash pink salt
-
1/3 c desired chocolate chips &/or nuts (optional) used Lilys dark chips

STEPS
-
Mash bananas with a potato masher. Stir in cottage cheese, whites, & vanilla extract and stir.

Add all other ingredients and besides chocolate chips and stir until combined. Add chips.

Bake at 350° in a lined or sprayed 10” bread pan for 50-55 minutes or 20-25 min for muffins in a lined muffin tin. Store in fridge. Good for up to a week. Makes 8 slices

I was skeptical of the cottage cheese lumps in the batter but they melted upon baking. The banana flavor was slight but these were delicious! It made 11 regular muffins. Thanks for another winner!

We LOVE this banana bread in our house! My oldest uses an eye gaze device to communicate and asked her aide to bake today. They made this together and I wish you could have seen the smiles as she was eating it! Thank you for your delicious and healthy recipes!!

So good! Made my second loaf today. I eat it daily as my treat when I have a sweet tooth. My 13 year old son loves it too!
