Cookie Dough Energy Bites

These are a delicious and nutritious snack that's perfect for an energy boost. To create these delightful bites, start with your choice of almond butter or peanut butter, providing both a creamy texture and nutty richness. Add a generous 1/4 cup of vanilla protein for that extra punch of energy and protein.

For the perfect bite-sized texture, incorporate 1/3 cup of coconut flour and 1/4 cup of oats. These ingredients add both body and fiber to the bites.

A teaspoon of vanilla extract enhances the flavor, while 1/4 cup of almond or coconut milk adds moisture and consistency to the mixture.

Now, for the delightful cookie dough flavor, don't forget to toss in 1/4 cup of dark chocolate chips. They provide a sweet contrast to the nut butter and make these bites truly indulgent.

Roll the mixture into bite-sized portions, and you'll have Cookie Dough Energy Bites that are perfect for a quick snack or to satisfy your sweet cravings in a nutritious way. Enjoy the taste of cookie dough in every bite while staying energized!

  1. In a large bowl mix all ingredients with your hands to combine. Add chocolate chips last.

  2. Add a splash more milk if too dry to form balls.

  3. Made 10 balls. Store in the fridge. Good for a week.

     

    Notes: These taste just as good as the traditional energy balls but without sugary add-ins like honey, maple syrup, or dates for that blood sugar balance and feel-good effect to keep you in fat-burning mode. Instead of the crash and more cravings/full of insulin and storing mode.

I’ve noticed while looking through your recipes that you rarely include the amount of sugar in the Nourishment Breakdowns. As someone recently diagnosed with prediabetes that information would be very helpful to me. Can you please include that in your breakdowns of your recipes? Thank you.

Yes! Usually there’s no sugar unless there’s some fruit or sweet potatoes in the recipe
