
INGREDIENTS
Dry:

2/3 c chocolate collagen protein or you can use The Peachie Spoon
Unflavored Organic Grass Fed Hydrolyzed Collagen
+ 1 T cocoa or cacao powder too)

1 c old-fashioned oats (GF if needed)

1/2 c coconut flour
-
1/4 c monk fruit sweetener
- Sprinkle salt
Wet:
-
1/2 c peanut butter (drippy natural kind)
-
2 tsp vanilla extract
-
1/2 c unsweetened milk (usually use almond or cashew)

Desired dark chocolate chips to top.
STEPS
1)Combine dry ingredients.
2)Add wet and stir until well combined.
3)Place on a lined cookie sheet and shape into the desired cookie form. They will spread while baking. The dough will be sticky but it’s worth it for the chewy cookie factor. You can put Avo oil on your fingers so it doesn’t stick or just lick your fingers because it's edible dough.
4)Press 3 chips into the top of each cookie if desired.
5)Bake 350° for 12 min or so. Let it sit 20 min to cool and set.
Sprinkled mine with coarse sea salt and cinnamon but that’s up to you!
Makes 12 - 2” cookies.
If vegan, they’re already eggs-less just use a vegan protein instead of collagen but the collagen is the chewy magic.
