Coconut Cream Pie Smoothie

As requested…here you go! Super yummy and lower carb than some other smoothies so have a piece of fruit on the side if you want. Whatever works!

Indulge in the tropical delight of a Coconut Cream Pie Smoothie. Blend together 1 cup of unsw almond milk, 1/4 cup of unsweetened coconut flakes or frozen coconut chunks, and 1/2 cup of low-fat cottage cheese for a creamy base.

Enhance the smoothie's nutritional profile by adding 1-2 tablespoons of flaxseed, psyllium husk, or chia seeds for optional fiber (I used 2 tablespoons of husk). Infuse the concoction with a hint of sweetness and depth with 1/2 teaspoon of vanilla extract.

Elevate the protein content by incorporating 1/2-1 serving of vanilla, peanut butter, or coconut-flavored protein powder. Complete the blend with 1 cup of ice and a dash of pink salt for a refreshing and satisfying Coconut Cream Pie Smoothie.

INGREDIENTS

  • 1 c milk of choice or water, used unsw cashew

  • 1/4 c unsw coconut flakes or frozen coconut chunks

  • 1/2 cup low fat cottage cheese

  • 1-2 T flaxseed, psyllium husk, or chia (optional fiber) I did 2 T husk

  • 1/2 tsp vanilla extract

  • 1/2-1 serving The Peachie Spoon Vanilla Protein Powder, pb, or coconut protein powder.

  • 1 c ice

  • dash of pink salt

 

STEPS

  1. Add ingredients in order listed to the blender and blend well. Topped mine with some low-sugar granola for a low crust vibe. @altereco_foods
