Flourless Chocolate Covered Strawberry Cookies

These cookies are a delightful and guilt-free treat that's perfect for indulging your sweet tooth. To make these delicious cookies, you'll need a creamy and rich almond butter as the base. Combine it with your choice of milk and a granulated monk fruit sweetener for a touch of sweetness without the sugar.

Add protein powder, whether it's your favorite flavor or unflavored, and unsweetened cocoa or cacao powder for a chocolatey punch. A hint of vanilla and a touch of baking soda ensure the cookies are perfectly balanced.

For the classic "chocolate-covered strawberry" touch, incorporate dark chocolate chips and broken pieces of freeze-dried strawberries or raspberries. These cookies are a guilt-free indulgence, rich in flavor and delight, perfect for satisfying your dessert cravings with a fruity twist. Enjoy the taste of chocolate-covered strawberries in every bite!

INGREDIENTS

  1. Combine almond butter, milk, and vanilla extract.

  2. Add all other ingredients (except chocolate & berries), and stir well to combine and add chocolate and berries. Stir and make into cookie shapes, they don’t spread while baking so make them flatter. Place on a lined sheet pan.

  3. Bake at 350° for 8-10 min. Made 12 cookies. Store in the fridge. Good for a week.

     

    Notes: Great dessert or snack. They're more of a healthy fat serving, so a yummy smoothie topper as your fat source or for a yogurt bowl. Really an anytime yummy.
