Chocolate Chip Cookies

INGREDIENTS

  • Dry

    • 1/3 c coconut flour

    • 1/3 c collagen

    • 1/3 c oats (GF if needed)

    • 3 Tbsp monk fruit sweetener

  • Dash of salt

    • Wet

    • 1/4 c almond butter, Grass Fed butter, or coconut oil (softened)

    • 1/4 c milk of choice

    • 1 tsp vanilla

    • 1/3 c dark chocolate chips

      STEPS

  1. In a large bowl. combine all dry ingredients and stir. Add wet, and stir. Then chocolate chips last. The dough is sticky. You can put avocado oil on your fingertips if needed.

  2. Form & flatten into cookie shapes (they don’t spread). I always add chips to the top so they’re pretty. Makes 10-12.

  3. Bake at 350° for 12-15 min. Let sit 20 to harden (you can do hard things). These are a fat source at mealtime or a snack if needed.

    Notes: If using unrefined coconut oil, you’ll taste the coconut flavor. I love it but not all do. If you’re not a coconut fan, buy refined oil or use nut butter instead.
