Chickpea Cucumber Salad

My fave summertime salad! This is great with any protein 🍤🍔🍗🥩 to complete a meal, super light and refreshing too. Perfect to bring to a BBQ! 🇺🇸

INGREDIENTS

  • 1 - 15 oz can chickpeas (drained & rinsed)

  • 1 cucumber, sliced thin

  • 1/2 red onion, diced

  • 1/4 c feta

  • 1 T red wine vinegar

  • 1 lemon, juiced

  • dash salt & pepper

  • 1/2 tsp Italian seasoning

    STEPS

  1. Place all ingredients in a bowl and stir. Better when made ahead & stored in fridge for flavors to mix in. Love it left over with cottage cheese for a yummy lunch. Makes 5 cups.
