INGREDIENTS

  • 1 can chickpeas (drained & rinsed)

  • 1 cucumber, chopped

  • 1/2 red onion, diced

  • 1/4 c feta

  • 1 T red wine vinegar

  • 1 lemon, juiced

  • 1/2 tsp each salt & pepper

  • 1/2 tsp Italian seasoning

     

    STEPS

  1. Place all ingredients in a bowl and stir. Better made ahead & stored in the fridge for flavors to mix in.

     

    Notes: Love this one year around but super refreshing in the summer during grilling season.
