  • 2 lbs. Boneless chicken breasts or tenders (fresh or frozen, unthawed)

  • 2 cans diced tomatoes

  • 2 cups chicken or beef bone broth

  • 2 tsp garlic, minced

  • 2 Tbsp taco seasoning

  • 1 onion, chopped

  • 2 bell peppers, chopped (any color)

  • 1 fresh zucchini or yellow squash, chopped

  • 1 tsp pepper

  • ½ tsp salt

    STEPS

  1. Place all ingredients in order as listed above in the slow cooker. Cook on low 6-8 hours or high 4 hours. Before serving, remove chicken and shred, then add back.

    Notes: Top with nonfat greek yogurt or sour cream, cotija, or your favorite cheese, chips, &/or avocado. I love to buy frozen bagged and pre-chopped bell peppers for this recipe to cut down on chopping time.
