Chicken Cobb Salad

Cobb Chicken Salad is such a perfect quick protein source at lunch or an unplanned dinner. I love having something like this🌯in the fridge when hunger strikes. 

**🤓Protein is the most important feel good macronutrient to me. It builds muscles, keeps you full longer, curbs cravings, & helps to balance blood sugar for steady energy. 

INGREDIENTS

  • 3-4 chicken breasts (I used 4 cups Costco already pulled chicken)

  • 3 boiled eggs 

  • 3 pieces bacon, cooked & chopped 

  • 1/2 red onion, chopped

  • 3 green onions, chopped (green and white part)

  • 1/3 cup nonfat Greek yogurt (more if you like it more creamy)

  • 1 tsp salt

  • 1 tsp pepper

    STEPS

    1. Combine all ingredients in a bowl and enjoy. Store in fridge. Good for a week. 

    To simplify I usually buy the already boiled eggs, and uncured microwave bacon. 

    For a complete blood sugar balancing meal I love on a salad, lower carb wrap or tortilla, piece of toast, potato, or with a serving of crackers. My favorites are @marysgonecrackers & @josephspitabread

    Calories: 190 | Fat: 7g | Carb: 2g | Protein: 30g | Fiber: 1g

    PROTEIN chicken, egg, bacon, yogurt 
    FAT bacon, yolks 
    FIBER both onions 
    CARB/STARCH none
