
This recipe is like a soft oatmeal chocolate chip cookie but a break apart bark. It’s loaded with protein and fiber and sugar free for happy blood sugar. I love to eat it over almond milk like a bowl of cereal.
Yummy in a bowl with milk, as a smoothie or yogurt bowl topper for that vital chewing to be satisfied and fully nourished. I love it with cottage cheese or even by itself for a wholesome snack or dessert.
INGREDIENTS
- 1 c oats (GF If needed)
- 1 c The Peachie Spoon Vanilla Protein Powder
- 1/2 c ground flaxseed
- 1/2 c any chopped nuts (used pecans and sliced almonds)
- 1 tsp vanilla extract
- 1 c liquid egg whites
- 1/2 c dark chocolate chips, used Lilys for sf
STEPS
1)Stir first 4 ingredients in a large bowl
2)Add whites and extract. Stir well to combine.
3)Add choc chips and stir.
4)Place on a cookie sheet and press down with the back of a spoon to flatten.
5)Bake 350° 8 - 12 minutes. Watch it bc it can burn quickly towards the end. Remove and cool. For bigger pieces leave it alone to cool for 5-10 min or so before breaking into pieces. It’s hard to wait😋. Store in the fridge in an airtight container. Good for a week or so.
