INGREDIENTS

1 - 12 oz pkg sliced mushrooms

2 sweet onions, sliced thin

2 - 16 oz pkg chicken sausage, mine was raw and not the pre-cooked kind

1/4 c balsamic vinegar

1/4 c coconut aminos
-
2 cloves garlic, minced

Desired pepper

Toppings after cooked (optional)

Desired crumbled cheese, I used goat
- Arugula

STEPS
- Place all ingredients on a lined sheet pan. I have a large sheet pan so you may need to use 2 regular size. Pour aminos and vinegar over the onions and mushrooms only.
- Bake at 400° 25-30 minutes. Make sure chicken is cooked through if raw.
- Stir to combine and top with cheese and greens, if desired. Serve over rice, cauli rice, or yummy by itself or even in a hoagie. Makes 5 servings - 2 sausage links and about 1/2 c veggies.
