Caramelized Onion Sheet Pan Dinner

INGREDIENTS

  • 1 - 12 oz pkg sliced mushrooms

  • 2 sweet onions, sliced thin

  • 2 - 16 oz pkg chicken sausage, mine was raw and not the pre-cooked kind

  • 1/4 c balsamic vinegar

  • 1/4 c coconut aminos

  • 2 cloves garlic, minced

  • Desired pepper

  • Toppings after cooked (optional)

    • Desired crumbled cheese, I used goat

    • Arugula

STEPS

  1. Place all ingredients on a lined sheet pan. I have a large sheet pan so you may need to use 2 regular size. Pour aminos and vinegar over the onions and mushrooms only.
  2. Bake at 400° 25-30 minutes. Make sure chicken is cooked through if raw.
  3. Stir to combine and top with cheese and greens, if desired. Serve over rice, cauli rice, or yummy by itself or even in a hoagie. Makes 5 servings - 2 sausage links and about 1/2 c veggies.

PROTEIN sausage 
FAT sausage, cheese (if adding)
FIBER arugula, onion, mushroom
CARB/STARCH none, serve over rice or with a potato, if desired

When do you put the garlic? Do you chop the sausage links before putting in the oven? Or cook whole then chop after done cooking? Would love a video or image of what it looked like before putting in the oven.

The garlic goes on top of the veggies with pepper, vinegar, and aminos. I cook my sausages whole and cut after but you can cut them before cooking too. Either way works🤗
