Caramel Protein Popcorn

Just three ingredients and so good! I loved the caramel sauce dipped with a cold apple too so this turned into all sorts of fun recipe options. Hope you love this one. Tastes like fall happiness and is blood sugar friendly! You can easily cut this recipe in half and make less. I used the ChocZero brand syrup that’s sweetened naturally with allulose, so net carbs are low from the fiber in the allulose. 

INGREDIENTS

1- 4.6 oz bag of Lesser Evil popped popcorn (abt 13 cups if popping your own)

2/3 c sugar-free maple syrup (or real maple syrup but won’t be low sugar) 

2 servings The Peachie Spoon Vanilla Protein Powder 

Optional add ins:

1/4 tsp cinnamon (add to syrup)

Peanuts (add with popcorn)

Pecans

White chocolate chips 

STEPS

1)Pour popped popcorn onto a sheet pan

2)Microwave syrup in a glass dish for 1 minute. Add protein powder and stir. 

3)Pour caramel protein sauce over the popcorn and add nuts or add ins if desired. 

4)Place sheet pan in the freezer for 10-15 minutes and serve. I put my batch in a bowl on the counter and it was gone by the end of the day but for longer storage for leftovers, store in fridge in a covered container. Makes 4 - 3 cup servings
