Butternut Squash Hash

A delightful combination of sweet butternut squash, savory chicken sausage, and a medley of colorful vegetables. Begin by sautéing a 16 oz bag of cubed butternut squash, providing a rich and satisfying base for the dish.

Incorporate a 12 oz package of your preferred chicken sausage—Greenwise is an excellent choice for a wholesome and flavorful option. Add 1 cup of any chopped vegetables of your liking, creating a vibrant and nutritious hash.

Season the hash with 1/2 teaspoon each of salt, pepper, and garlic powder, enhancing the savory notes. To top it off, fry 3-4 eggs until perfectly golden and runny, elevating the dish with a rich and velvety finish. Butternut Squash Hash is a comforting and visually appealing meal that captures the essence of autumn on your plate.

INGREDIENTS

  • 1 16 oz bag of butternut squash, cubed

  • 1 12 oz package chicken sausage (used Green Wise)

  • 1 c any chopped veggies

  • 1/2 tsp each salt & pepper

  • 1/2 tsp garlic powder

  • 3-4 eggs, fried for topping

    STEPS

  1. In a sprayed skillet over medium heat, cook butternut squash cubes. I usually spray them with avocado oil too. Season with salt, pepper, & garlic powder, cover, and cook for 5 minutes or so until softened.

  2. Add sausage and cook until browned (they’re already cooked).

  3. Add chopped veggies of choice (zucchini, peppers, yellow squash, onion, spinach) are my go-tos. Cook until heated.

  4. Serve with a fried egg and cheese on top, if desired.
