1 16 oz bag of butternut squash, cubed

1 12 oz package chicken sausage (used Green Wise)

1 c any chopped veggies

1/2 tsp each salt & pepper

1/2 tsp garlic powder

3-4 eggs, fried for topping
STEPS

In a sprayed skillet over medium heat, cook butternut squash cubes. I usually spray them with avocado oil too. Season with salt, pepper, & garlic powder, cover, and cook for 5 minutes or so until softened.

Add sausage and cook until browned (they’re already cooked).

Add chopped veggies of choice (zucchini, peppers, yellow squash, onion, spinach) are my go-tos. Cook until heated.

Serve with a fried egg and cheese on top, if desired.
