INGREDIENTS

  • 2 large or 3 small chicken breasts, cooked and shredded (rotisserie works great)

  • 1 cup cottage cheese, blended and smooth

  • 3/4 cup buffalo sauce (1/2 c if sensitive to spicy)

  • 2 T coconut aminos or Worcestershire

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1/2 tsp pepper

  • 1 - 10 oz bag frozen riced cauli, cooked

  • 1 cup rice, cooked (used 1 microwave cup)

  • 1/2 cup cheddar, shredded

  • Optional toppings: Green onion, Blue cheese crumbles

  • Optional add-ins: Chopped carrot, Chopped celery

STEPS

  1. Add all ingredients, except cheese to a bowl and stir well.

  2. Pour into a sprayed glass 9 x 13 dish.

  3. Top with cheddar and bake in the oven at 400° for 20-25 minutes
