Breakfast Meatballs

These are great for a breakfast change up or breakfast for dinner. They can be made ahead of time for a meal prep, balanced by themself or grab a piece of fruit or berries to go with them if you want a carb/starch. Perfect addition to Christmas morning breakfast and they even freeze well. The green apple gives a fall vibe but delish for any meal all year long. Hooray for easy, real-food lean protein for those wellness goals.


INGREDIENTS

  • 1 lb ground chicken, used 93% lean

  • 1 lb ground turkey breakfast sausage

  • 1/2 Granny Smith apple, grated

  • 1/2 yellow onion, diced

  • 1 egg

  • 1/4 c coconut flour

  • 1/4 tsp sage

  • 1/4 tsp thyme

  • 1/2 tsp salt

  • 1/4 tsp pepper

STEPS

  1. In a large bowl combine all ingredients with your hands. I used a cheese grater to grate the apple. 

  2. On a lined or sprayed sheet pan, use a 1/4 cup measuring scoop to form meatballs and place on the pan. Mine made 14 meatballs. 

  3. Bake at 350° 25-30 minutes. Turn the oven to high broil and broil 2-3 minutes or until browned. Make sure the internal temperature is 175° and cooked through.

Dried! It’s nice to use fresh if you have too. The swap is 1 tsp dry = 1 Tbsp fresh

Is there a substitution for coconut flour? I usually don’t have that

For a swap you can use any flour but 1/4 c coconut flour = 1 c all other flours. It’s my go to bc low fat and carb with fiber.

THESE ARE INSANELY GOOD. They have really good flavor and are very tender. Both of my toddlers devoured as well. I didn’t have any sage in my pantry, so I did thyme, and substituted sage with rosemary and oregano! Fantastic breakfast/healthy snack recipe! We will keep these in the freezer at all times ready to heat up.
