
These are great for a breakfast change up or breakfast for dinner. They can be made ahead of time for a meal prep, balanced by themself or grab a piece of fruit or berries to go with them if you want a carb/starch. Perfect addition to Christmas morning breakfast and they even freeze well. The green apple gives a fall vibe but delish for any meal all year long. Hooray for easy, real-food lean protein for those wellness goals.
INGREDIENTS

1 lb ground chicken, used 93% lean

1 lb ground turkey breakfast sausage

1/2 Granny Smith apple, grated

1/2 yellow onion, diced

1 egg

1/4 c coconut flour
-
1/4 tsp sage

1/4 tsp thyme

1/2 tsp salt

1/4 tsp pepper
STEPS

In a large bowl combine all ingredients with your hands. I used a cheese grater to grate the apple.

On a lined or sprayed sheet pan, use a 1/4 cup measuring scoop to form meatballs and place on the pan. Mine made 14 meatballs.

Bake at 350° 25-30 minutes. Turn the oven to high broil and broil 2-3 minutes or until browned. Make sure the internal temperature is 175° and cooked through.
