Blueberry Muffin Mug Cake for 1

INGREDIENTS

  • 1/2 c unsweetened apple sauce (I used a kid single serve)

  • dash of salt

  • 3 T almond flour or 1 T coconut flour

  • 2 T vanilla protein

  • 1/2 tsp baking powder

  • handful of blueberries, fresh or frozen

  • ¼ tsp cinnamon or pumpkin pie spice

STEPS

  1. In a large coffee mug or bowl combine ingredients in order as listed. Stir well and microwave for 2-3 minutes covered with a paper towel. I used a cereal bowl and it took 2 1/2 minutes. Topped mine after with fresh blueberries and a sprinkle of monk fruit sweetener. Have also added Greek yogurt to cool it off faster when I can’t wait.

Note: Great afternoon sweet tooth snack with a creamy coffee or to make it more of a meal, add 1 T of nut butter and a Greek yogurt or cottage cheese on top for a little more protein.
