Blueberry Citrus Vinaigrette

Elevate your salads with the refreshing burst of flavor from Blueberry Citrus Vinaigrette. This vibrant dressing features a delightful blend of apple cider vinegar, freshly squeezed orange juice, and the richness of extra virgin olive oil. Infused with the natural sweetness of blueberries and the aromatic essence of fresh mint, it's finished with a hint of shallot and a harmonious mix of cumin, salt, and pepper. Drizzle this zesty vinaigrette over your favorite greens for a burst of citrusy goodness with every bite.

INGREDIENTS

  • 1/4 c apple cider vinegar

  • 1 orange, juiced

  • 1 T extra virgin olive oil

  • 3 T water

  • 1/4 c blueberries

  • 4-5 fresh mint leaves

  • 1/2 shallot, chopped or 1/2 tsp onion powder

  • 1/2 tsp each salt & pepper

  • 1/2 tsp cumin

     

STEPS

  1. Blend well in a blender or food processor. Good for up to 10 days in the fridge. May need to add a little water to thin out after refrigerating if not using right away. Great on a bag of slaw or any salad with chicken or fish. I love goat cheese or feta and pecans with this one on a salad or slaw too. Also a yummy addition on a tuna or chicken melt.

 

Note: Vinegar is great for overall health and has so many benefits. It Improves insulin function and lowers blood sugar levels after meals so these vinaigrette dressings and marinades are a great yummy way to enjoy it more often. So full of flavor. These recipes are all low in oil so a great addition to higher fat meats like salmon, red meats, and dark meat chicken/turkey. But honestly great with anything anytime because they aren’t a fat or starch source really, just a flavor party. They’re great on pasta salads, fresh salad greens, wraps, slaw, or any cauli or rice bowl with a protein. Making your food taste good is a fun and vital part of feeling satisfied and nourished.
