At Home Chipotle Bowls

Recreate the flavors of your favorite Chipotle bowl right at home with this easy and delicious recipe. Start by slow-cooking chicken breasts in a jar of salsa and a tablespoon of taco seasoning for tender, flavorful meat. Customize your bowl with your choice of beans, cooked rice or cauliflower rice, and shredded lettuce. Add a dollop of Greek yogurt or sour cream for creaminess, and top it off with queso and shredded cheese if you like. This versatile and satisfying meal is perfect for any time you're craving a homemade version of the classic Chipotle experience.

Of course, you can add sautéed onions and veggies and whatever other mix-ins you love. I love to combine cauli rice with rice or rice for the kids and I have on a salad. Lotsa options but yay for an easy meal and saving some money.

INGREDIENTS

  • Slow Cooker Chicken:

    • 4 chicken breasts

    • 1 jar salsa

    • 1 T taco seasoning

  • Bowl fixings:

    • Beans, if desired

    • Desired cooked rice or cauli rice

    • Shredded lettuce

    • Greek yogurt or sour cream

    • Queso

    • Shredded cheese, if desired

      STEPS

  1. First to make the slow cooker taco chicken, Add 4 chicken breasts to a slow cooker, top with while jar of salsa and 1 T taco seasoning. You can also add a drained and rinsed can of pinto or black beans here.

  2. Cook on low 5 hours or high 3-4 hours. Remove chicken and shred with 2 forks or use a mixer/blender. Put back in cooker and stir well and enjoy!

  3. Cooked desired rice, cauli rice, or a combo. I usually buy the minute microwave rice and they even have a cilantro lime one sometimes to be even more chipotle - esq.

  4. Heat store-bought queso and build your bowl with desired fixings.
