
Ok so I wanted to make an egg salad with juicy small apples in it. Sounds so refreshing for summer to me and turns out it’s a thing in Germany and they always add apples to egg salad. ?? But I’m making my own American comfort-food twist by adding bacon and white cheddar cheese. Hope you love this recipe! We all do over here.
INGREDIENTS

12 eggs, boiled

1/3 c nonfat Greek yogurt or cottage cheese (can add more if you prefer)

2 T dijon mustard

1 T apple cider vinegar

1 apple, chopped small (love a Granny Smith or to be pretty, use 1/2 green and 1/2 red apple)

1/2 c white cheddar cheese, shredded

4 slices bacon, cooked and chopped

2 T fresh chives, chopped
- 1/2 tsp each salt & pepper
STEPS

Mash eggs with a pastry cutter in a large bowl.

Add all other ingredients and stir well. Store in the fridge. Good for a week. Makes 4 - 1 1/2 cup servings.
