
All the cozy bakery flavors I crave… without leaving me hungry an hour later from a crash.
I love warming up a square and topping it with low sugar vanilla Greek yogurt and berries or warm cinnamon apples. It tastes like the coziest little breakfast treat while helping me hit my protein and fiber goals. They also make the BEST grab & go option straight from the fridge. Meal prep once and enjoy all week long. Good for up to a week in the fridge and freezes beautifully too.
INGREDIENTS
Dry
1/3 c coconut flour
1/2 c chia, ground flaxseed, or whole psyllium husk flakes
flakes (1/4 c if using husk powder, that’s what I used)
2 tsp baking powder
1 c The Peachie Spoon Vanilla Protein Powder
Wet
1 c nonfat Greek yogurt or low fat cottage cheese
1/2 - 1 tsp almond extract (amount depending on your love of almond)
1 tsp butter extract
1 tsp vanilla extract
1 c liquid egg whites
1/2 c unsweetened apple sauce
1/2 c natural almond butter (almonds and salt)
1 1/2 c almond milk (unsweetened)
1 c riced cauli (frozen) or grated fresh zucchini (squeeze out juice for zucchini)
Toppings
1/4 c sliced almonds
3 T confectioners sugar replacement (optional)
STEPS
1)Combine dry ingredients in a bowl and stir. Add all the wet ingredients. Stir well or whisk well.
2)Place into a greased 9x13 dish and top evenly with the sliced almonds. Bake at 350° for 30-35 minutes.
3)Dust the top with confectioners sugar replacement with a sifter, if desired. Allow to cool before cutting into 6 servings for an easy prepped anytime meal. Store in the fridge for up to a week.
STORAGE :
I love to heat up the noatmeal square and top mine with a low sugar vanilla Greek yogurt and berries or warmed apple if I have the time.
You can also grab a slice on the go and eat it like a bar. Mouth party perfection. Good for a week in the fridge & freezes well too. If freezing, place each slice in a baggie and microwave, bake, or air fry to thaw.

If you use the zucchini option, is it 1 cup after you squeeze out the liquid? Or is it 1 cup grated and then squeeze out the liquid?

Couple questions, are there no “oats” in the recipe and is there a substitute for the peanut butter? Thanks, can’t wait to try it!!

Hey! Yes it’s “noatmeal” so no oats. And any nut butter works for a swap, sunflower butter for a nut free option
How can I make it less jiggly ? I’d prefer to eat it as you are showing and not with a fork .
