INGREDIENTS
- 1 ripe fresh peach, diced and remove the pit (skin on or off, your preference)
- 1/2 tsp corn starch
- 1/2 tsp vanilla or butter extract
Crumble
- 2 T coconut flour
- 1 serving The Peachie Spoon Vanilla Protein Powder
- 1/2 tsp cinnamon or pumpkin pie spice
- dash of salt
- 1-3 Tbsp water (as needed)
STEPS
1)In a small bowl, combine diced peaches, corn starch, and extract. Stir and microwave 1 minute
2)While that’s cooking, in a separate bowl mix crumble ingredients. Adding water last as needed to make desired crumble texture.
3)Place topping over the peaches and microwave 1 more minute. Top with whipped cream or vanilla Greek yogurt and more cinnamon and enjoy! If you want to make it more of a meal, I add 1 T butter over the crumble before cooking for some healthy fats.
