3 Minute Single Serve Protein Peach Cobbler


3 minutes. Single serve. Protein-packed. Cobbler dreams do come true. 🍑💪🏼✨Perfect for keeping those health goals on track—high fiber, high protein, oat-free, and totally blood sugar friendly. 🙌🏼Because dessert should love you back.

INGREDIENTS

  • 1 ripe fresh peach, diced and remove the pit (skin on or off, your preference)
  • 1/2 tsp corn starch
  • 1/2 tsp vanilla or butter extract 

Crumble 

STEPS

1)In a small bowl, combine diced peaches, corn starch, and extract. Stir and microwave 1 minute 

2)While that’s cooking, in a separate bowl mix crumble ingredients. Adding water last as needed to make desired crumble texture. 

3)Place topping over the peaches and microwave 1 more minute. Top with whipped cream or vanilla Greek yogurt and more cinnamon and enjoy! If you want to make it more of a meal, I add 1 T butter over the crumble before cooking for some healthy fats.
