3 Minute Single Serve Protein Cobbler

Light and so satisfying for the an anytime sweet tooth fix or happy! Loaded with fiber and protein instead of fat and carbs for a feel good treat. And oat free to keep lower carb and my blood sugar happy. 

INGREDIENTS

  • 1/2 c frozen wild blueberries (any fruit or berry works!)
  • 1/2 tsp corn starch
  • 1/2 tsp vanilla or butter extract 
  • Crumble 

STEPS

  1. In a small bowl, combine berries, corn starch, and extract. Stir and microwave 1 minute 
  2. While that’s cooking, in a separate bowl mix crumble ingredients. Adding water last as needed to make desired crumble texture. 
  3. Place topping over the berries and microwave 1 more minute. Top with whipped cream and more cinnamon and enjoy! If you want to make it more of a meal, I add 1 T butter over the crumble before cooking.

FIBER coconut flour, some in blueberries
CARB/STARCH blueberries

This was so good! I air fried it for about 5 minutes on 390 to crisp it up … chef’s kiss! Great recipe!

You can just skip it but the Protein is the only sweetener so may not be very sweet

I top mine with some plain Greek yogurt and pecans and enjoy it for breakfast. So delicious!
