
I mean, 2 cookies is similar macros to a protein bar. So fun to have 2 cookies instead 🍪🍪🥳
INGREDIENTS
- 1 large or 2 small ripe bananas, mashed
- 1/2 cup natural peanut butter or desired nut butter
- 1 cup vanilla protein powder (always use The Peachie Spoon Protein)
- Optional toppings:
- Chocolate chips
- Sea salt for topping
STEPS

Mash the banana then fold in the peanut butter and protein powder.

Form 12 cookies onto a parchment lined baking sheet. Dough will be sticky. Adding oil to your hands helps.

Then top with chocolate chips, if desired. Bake at 350° for 7-8 minutes until edges are golden and center is no longer wet.

Remove and top with sea salt, if desired. Let cool for 5 minutes or so to harden before removing from cookie sheet. Makes a baker's dozen. Store in the fridge for up to a week.

I’ve made these a few times and love them! Sometimes they’re a bit dry, but I find them better with more banana and/or olive oil. And I love them with a glass of milk or coffee!
Wondering if it would work out if you swapped bananas for pumpkin puree?
