15 Minute Fish Tacos

Indulge in the quick and flavorful delight of 15-Minute Fish Tacos. With just a handful of ingredients, transform fish fillets into a zesty masterpiece. Season the fillets with a harmonious blend of seafood and taco seasoning, infusing them with a burst of flavor. Warm tortillas await their delicious filling, and you can customize your tacos with your favorite cheese. In just 15 minutes, savor the freshness and simplicity of this delightful seafood taco creation.

INGREDIENTS

  • 3-4 wild caught (any) fish fillets (thawed if frozen like the package says)

  • 1/2 tsp seafood seasoning

  • 1/2 tsp taco seasoning

  • Tortillas, I use low carb but corn is great too

  • Desired cheese

  • Quick Mexican Slaw

     

    • 1 bag slaw

       

    • 1/4 c avocado mayo or Greek yogurt (or a mixture of the two)

       

    • 2-3 T apple cider vinegar @bragg

       

    • 1/2 tsp each salt & pepper

       

    • 1 tsp cumin

       

    • 1/4 c feta

       

    • 1/4 c fresh cilantro 

       

    • 1/2 red onion, chopped 

       

    • 1 lime, juiced

STEPS

  1. In a skillet over medium heat, cook fish fillets and season. Cook for about 6 minutes on each side or until flakey.
  2. Serve in low-carb tortillas, top with desired cheese, and my Mexican Quick Slaw.
  3. Quick Mexican Slaw: 
    1. Add all ingredients to a bowl and stir. Great to make ahead and allow to soften. Great way to get in fiber at any meal as a side or a fish taco topper. Another option is a fish taco bowl with cauli rice, slaw, and fish for a super low carb option and skipping starch. All works. Makes 5 - 1.5 cup servings 

Note: Fish is rich in calcium and phosphorous and a great source of minerals, such as iron, zinc, iodine, magnesium, and potassium. These vital minerals can be depleted from stress. They effect the adrenal function and stress response. They also help thyroid function on a cellular level, helps increase stomach acid to aid in digestion, and effects our insulin response to foods by getting the glucose in our cells better. So more balanced blood sugar naturally when we are getting these minerals in. That’s a lot! So trying to add fish to the dinner menu more often.

CARB/STARCH none
